Originally from Tasmania, Jerome Dalton’s love for unique cuisine and his desire to learn new culinary techniques has taken him across the world to 40+ countries. Whether it is pickling herring in Sweden or pounding green pawpaw with Thai grandmothers in Chiang Rai, Jerome seeks adventure in both life and food. Jerome has lived and worked in England, Spain and South Africa. He now calls Brisbane home and in 2003, launched Brisbane’s premier catering company, Dalton Catering.
Jerome will be putting his showman skills to work for a series of cooking demonstrations throughout the day on how you can re-create some of the festivals offerings at home.
